I always liked having this thread :)

Anyway, DH and I are going out for sushi tonight. We found a really good place when I first got here and I can't wait to go back :D

I'm pretty pooped from being sick, so I'm going to whip up some pasta with roasted red peppers (from the jar :-) and Italian sweet turkey sausage. I need to root around to find a good veggie. Probably green beans as we've been on a cauliflower/broccoli kick lately.

Thanks Mel. My husband has to work tonight, so that was something easy that wouldn't wake him up while I was cooking it. And between the ziti I made last night and the deer roast from tonight, I won't have to cook over the weekend. :)

I've got a deer roast in the crock pot and I'll make up some rice and biscuits to go along with it.

I used the last little bit of our deer last night in a pot of beans. It really was good!

My husbands family owns a butcher shop in TN, so we normally have alot of deer. Especially this time of year.

How do you usually tenderize it? I usually marinate it with some diced onions, salt, pepper and garloic. Then the next morning I beat the heck out of it with one of those hammers, and cut it into little pieces and cook it all day. Otherwise it is really tough!

The deer meat we get usually doesn't need tenderizing. In order to get the gamy taste out of it, I marinate it over night, but that's about it. Sometimes when hubby is gone all week, I'll defrost several packs of deer tenders, marinate them in soy sauce and have it at night with some eggs. Yum!

My dad use to soak it in vinegar over night to break it down.

I'm making build-a-burrito for dinner.

I put out little bowls with chopped onion, chopped tomato, chopped avocado, refried beans, cheese, and pulled chicken. Then I heat up some soft corn flour tortillas, and we each construct our own burritos as we like 'em. Any leftovers will get refrigerated for a Tex-Mex omelet for tomorrow's breakfast.

hubby is insisting on cooking egg mcmuffins lol... he bought mcmuffins, and all the stuff to do it, its just good for my diet... So I am debating, should I be bad and have one, or should I remain good and just have a sammich...

My guess is that one egg mcmuffin is not much different in calories than a sandwich. The English muffin has about as many calories as two slices of bread. 1 egg is 75 calories. A slice of Canadian bacon is about 75 calories. Ask him to make yours without cheese.

Well he has pan sausage, eggs, cheese, and bacon for them, not canadian either. Its the fattening stuff. I'm not a fan of pan sausage really. 2 slices of bacon is 80 calories after fried. 92 in 1 fried egg, the english muffins I have say 140 calories for 1. Total of 312

My sandwich will have a total of 270 after I put it together.

Too much greasy foods after you have been eating well and non-greasy foods will probably make you sick. No matter how good that bacon smells it's best to just stick with the sandwhich lol.

Tonight will be left overs from the supper he didn't eat last night. Last night I made: Baked potato soup, salad, meatloaf, pnto beans w/cornbread, field peas, mashed potatoes, fresh home made bread for the soup and a chocolate ganach bread for desert.

FH had sweet and sour chicken with rice, crab rangoon, and an egg roll. I had cashew chicken with rice, crab rangoon, and an egg roll. I got off work late and we needed something quick, so we went to a little hole in the wall called Chopsticks.

Mine is always dry if I make it in the oven, but perfect if I make it in the crock pot.

Anyway, tonight is Orange-Cranberry Chicken (on the stove instead of the crock pot).

I let the pot roast go another hour and a half and it really loosened up (it was in a crock pot). I almost had a heart attack there for a minute. :-)

Not sure yet. It's looking like it's going to be a busy afternoon (ds has sports this afternoon) so I'm thinking a crock pot thing. If I have the right stuff to put in. I have meat and veg, but not sure what else to put in it. I don't think I have beef stock or anything like that.

Well, I tried the bean burgers and they actually came out good. Hubby thought they were actually meat at first..lol The best part they were very filling (with the avocados and white rice).

I made pizza and as I pulled them out of the oven, they fell off of the dish and landed face down on the door. I burned myself trying to get it all off before the smoke alarms started going crazy. So I'm done. I had cereal and dh can have whatever he wants. We'll start again tomorrow.

Since I had black bean burgers and white rice leftover from last night, I decided to turn the white rice into chinese style with soy sauce, water chesnuts, cashews, broccolli and diced onions. It took the meal from yesterday and added a different flavor, so it didn't really feel like leftovers...lol But no pita bread for the 'burgers' tonight.

Found it. Here's a part of it :)

Hah! As I looked in about 15 minutes before the cooking time was over, I discovered that the crust was really done, and would need some help to keep from burning. Bragging about my intelligence and resourcefulness (pride goeth before a fall, don't you know?) I pulled the pie out of the oven- cleverly using the other still frozen and unused pie shell to measure some aluminum foil. I cut a circle out of the center of the foil and covered the crust. Only about 15 minutes until the pie would be ready, but I had to put the pie back into the ove....AAAAAHHHHHH!!!

I dropped the pie, face down- not just in the oven, but smack in the middle of the crack where the door attatches to the oven. It was a huge blob of mangled crust and filling, and it was dripping through the crack into the drawer beneath the oven and out onto the floor. I refused to accept surrender- and grabbed the pie shell I had used to measure my foil- and scooped up what I could and plopped it in the uncooked crust. I am sure there were some bits of char in there- but it didn't matter--I wasn't going to give in!

So, no dinner for me today, today is my "cleanse" day for the detox program I am on and I am drinking water and this cleansing liquid all day. But I still have to figure out what to feed my husband and son. It's very challenging to have to cook food and be unable to eat it! Prayer has been my source of comfort for sure...lol

I found some great things that you spinkle over chicken or fish and they are well yummy.

Last night I had the coriander, ginger and mango one on some salmon, tonight i had apple, sun dried tomato and something on chicken.

It was very yummy.

I don't know what to do tonight. I need to figure out if I'm going to the gym or if I hurt too much. That will determine more what I am going to have.

If I do go to the gym I will go via town and get a subway to have half between jam and aqua and the other half after aqua. If not, I don't know. I might just have some fishfingers and beans

I found a good deal on chicken over the weekend, so DH grilled it all, and what was left over I shredded with BBQ sauce, and I am going to serve them in the wheat pita bread that I made. :) Served with cheesy broccoli and rice, and some veggie, not sure. Cole Slaw would have gone so well with it but I didnt want to go to the store. :P

It didn't turn out as well as I had hoped. I accidentally bought pre-cooked shrimp so by the time the alcohol had cooked off from the tequila they were a bit tough.

Had beef stew done in the slow cooker. I think there was too much rice in it. I just put 1 cup rice, 400g gravy beef, 2 carrots, 2 zucchini, tin tomatoes and beef stock. Next time I think 1/2 cup rice would be sufficient.

Tonight I'm making a home made chicken pot pie and some collard green soup:

Collard Green Soup

Ingredients
1 tablespoon olive oil
1 cup finely chopped yellow onion
3 garlic cloves, minced
1/2 cup pinot grigio or other light white wine
1/2 teaspoon freshly ground black pepper
1/4 teaspoon salt
4 cups finely shredded collard greens (about 6 ounces)
2 teaspoons minced fresh thyme
2 (14-ounce) cans fat-free, less-sodium chicken broth
1 (15.5-ounce) can Great Northern beans, rinsed and drained
Preparation
Heat oil in a Dutch oven over medium-high heat. Add onion and garlic; sauté for 5 minutes or until onion is tender. Add wine, pepper, and salt. Reduce heat; simmer 5 minutes or until liquid almost evaporates. Add greens, thyme, and broth. Cover, reduce heat, and simmer 8 minutes or until greens are tender. Add beans; simmer 5 minutes or until thoroughly heated.

Tonight was spanish rice with refried beans wrapped in a tortilla with chopped tomatoes, lettuce and avocado and some sides. It was pretty good. The only thing, I ran out of sazon from Goya and my rice was more like a pale yellow instead of the traditional color of spanish rice.

We went to a "brunch" after church today, and had so much to eat that tonight I ate light (hubby wasn't even hungry). I had 4 breaded chicken fingers with a sprite, then recently I had a small bowl of my favorite yogurt ice cream (cool mint cookie flavor). :)

Seeing as I'm a fan of freezing meals after they are prepared and there is only two of us to feed, we are having left over lasagna (for hubby), and left over stuffed peppers (for me). I need to buy rolls, and make a salad.. Wella! It's all done.

I cook stuffed peppers two different methods: Crock pot, or in the oven. Either way they turn out delicious.

I use colored peppers (although the green ones are fine too), wash, take out the seeds, and cut in halves.

I use a mixture of meat, finding the tastiest to be a package of ground turkey breast, and extra lean ground beef mixed together in a large bowl, boil one of those rice in the bags (like Uncle Ben's or Minute rice), and put that in the mixture.

Put one egg, a little milk, some ketchup, and a small can of tomato sauce in the mix along with a chopped up onion. For seasoning I've found Mrs. Dash's "garlic herb" no salt seasoning to be perfect for this recipe (sprinkle some in the mix). Mix it all up good by hand forming into a large loaf and I usually use a small dark oval roaster with a lid when I do this in the oven, otherwise I put the mixture in the pepper halves, and put a little tomato sauce on the bottom of the roaster pan or crock pot before adding the filled peppers.

When finished filling the peppers, pour a little tomato sauce over the top of the peppers, cook on low for a few hours (at least 6 hours) in the crock pot or baked in the oven at 350 checking them in an hour, to see if they are done. The peppers freeze well, and are so moist and yummy!

It usually depends on who is doing the cooking. :P For some people its taco meat, cheese, lettuce, tomato, and any other fixin's served on burger buns instead of taco shells. :)
But I usually mix the taco seasoning with ground turkey and form patties and cook them, then serve them on buns with all the fixin's. :) They are fun and easy.

I made a "Chinese" dish. I cooked chicken with green peppers, green onion, yellow onion, pineapple, soy sauce and a little peanut butter. Added in some cooked spaghetti noodles and got this little concoction. Tastes pretty yummy!

Timary, that sounds good.... actually, my hubby cooks like that. He never starts out with any firm goal but his foods always progress to something yummy.

I made dinner really early cuz of work - tofu steak, brown rice and steamed broccoli. Eating dinner early means that I come home feeling a bit hungry but it's too late to eat.

Well this one is not hard since it was already prepared! lol I went to the vegan section of my grocery store to buy regular tofu and lo and behold the package was sitting right by it, and I figured I'd better try it. It's really yummy too, it tasted more like chicken than steak though...hehe

Preparing tofu isn't hard, you just have to buy the right texture. For meals, the firmer the better, for smoothies, the softer the better.

Tomorrow night I'll be making a chicken bowtie pasta dish with some home made yeast rolls and a side salad.

Ingredients
1 quart water
4 skinned and boned chicken breasts, cut into bite-size pieces
8 ounces uncooked bow tie pasta
1 cup chicken broth
1 celery rib, chopped (about 1/2 cup)

1 (10 3/4-ounce) can cream of mushroom soup
1 (8-ounce) package pasteurized prepared cheese product, cubed
Garnish: chopped fresh parsley
Preparation
Bring 1 quart salted water to a boil in a Dutch oven. Add chicken, and cook 12 minutes or until done. Remove chicken from water with a slotted spoon. Add pasta to water in Dutch oven, and cook 10 minutes or until tender; drain. Keep warm.

The Neely's had a good recipe for chicken thighs on their show yesterday. First they browned the chicken on both sides, and took the chicken out. They sauteed an onion in the drippings, added some garlic, some chopped from thyme and rosemary, added a splash (or half a cup) of white wine, and a can of crushed tomatoes. Bring to a boil, reduce heat, put chicken back into the pan, cover and simmer for 20 minutes.

I think it sounded pretty good.

We are having baked ham slices (something else I froze after baking a large ham) with fresh cut up pineapple slices over it, mixed vegetables (frozen, steam fresh ones), and baked potatoes.

Ham and fresh green beans with red potatoes is a favorite of mine, but hubby is tired of that same old ham dish, so I thought I'd do something else. I need to learn to make other side "starch dishes", because my main ones are potatoes (in some form), or macaroni and cheese. Hubby is not a "rice" fan so much (as a side dish), although I make those "boil in bags" periodically, adding a little butter for taste. I'm not a fan of the rice-a-roni products for the high amount of sodium in certain products. I sorta of watch sodium levels (letting people add their own salt for taste).

That's funny, I've never thought of using anything but chicken. I like the idea of changing it up a bit. My Baba and her family were dirt poor (literally, had dirt floors and lived in a one room shack) so I think that chicken was all they had. That's also how I make my chicken soup, just leave out the beets and add noodles.

it gave my daughter a great idea for what to do with the leftover lasagne noodles, or using lasagne noodles for a dinner. Same prep as the lasagne, but instead of laying it out flat, roll up the meat and cheese IN the noodle and bake them, kinda comes out like manicotti.

Yesterday was a total diet nighmare, but boy did it taste good. We had spicey fried chicken, garlic smashed potatoed, and broccoli slaw and dinner was pancakes with lemon and powdered sugar

Today we had left over broccoli slaw and chicken/apple/maple "hotdogs". They are low fat and no nitrates, but my fingers are starting to look like hotdogs from the salt :P

I love using the Griller crumbles when I cook. I use them all the time to make Hamburger helper. It's nice because then you don't have to take the time to brown the beef, drain the fat, and all that fun stuff. Just dump everything into the skillet and let it cook. :D

Not sure what I'm going to have for supper tonight... Might make myself a couple of Chik patties. (Yay for Morningstar!) Might also make a couple of baked potatoes to go with it....

Tonight is Pizza night @ the AWANA Grand Prix so that's what the boys will have :) I'll have salmon before we leave :D

I just put it in the crock pot on low with a seasoning packet that comes with it. :P Then I add the cabbage for the last hour or so.
